Ingredients:
1 cup olive oil
¼ cup chopped fresh parsley
One lemon, juiced
2 tbsp. hot pepper sauce
Three cloves garlic, minced
1 tbsp. tomato paste
2 tsp. dried oregano
1 tsp. salt
1 tsp. ground black pepper
2 lb large shrimp, peeled and deveined with tails attached
Six skewers
Directions:
Combine the olive oil, parsley, lemon juice, hot sauce, garlic, tomato paste, oregano, salt, and black pepper in a large mixing bowl. Keep a little aside for later basting. Put the leftover marinade and prawns in a sizable, sealable plastic bag. After sealing, marinate for two hours in the fridge.
Heat a grill on a moderately low setting. Shoursimp should be threaded onto skewers and pierced once near the head and once near the tail. Eliminate marinade.
Grates should be lightly oiled. Cook prawns for about 5 minutes on each side, and baste periodically with the marinade that has been saved.
