Ingredients:
1 cup maple syrup
5 tbsp. margarine
One large egg
1 ½ cups all-purpose flour
½ cup whole wheat flour
Two ¼ tsp. baking powder
½ tsp. ground nutmeg
½ tsp. salt
¼ tsp. ground ginger
½ cup milk
Directions:
The oven should be preheated to 350 degrees F (175 degrees C)—clean and grease two 12-cup muffin tins.
Mix margarine and maple syrup in a sizable bowl and beat until thoroughly combined and creamy. Add egg and blend well.
Combine the all-purpose and whole wheat flour, baking powder, nutmeg, salt, and ginger in a small bowl. Batch-wise, alternate adding the milk with the dry ingredients in the batter while beating it quickly after each addition. Prepared muffin cups should be 3/4 full of batter.
Bake in the oven for 20 to 30 minutes or until a toothpick inserted in the center comes out clean.
